After growing up in Kuwait, Khalaf went to college at the University of Kentucky to study accounting. But a lifetime of travel inspired him to see the rest of the US, driving around in a van until the motor burned out, but remaining hungry and trying food from all regions.

Since college, he has opened a number of restaurants, including Medina and Baboush in Dallas’ West Village. Shawarma Bar is his latest casual crowning achievement.
